Large beautiful juicy subacid all-purpose fruit. Very white fine-textured melting flesh has the consistency of a perfect Mac but with none of the scab. Cooks up pretty quickly into a gorgeous orange-apricot-colored coarse slightly loose sauce. Medium to large fruit—mostly oblate, mottled with light red and pink stripes and blushed red with a russet splash around the stem—weighs exactly 9 ounces. (No guarantees.) Looks a bit like a cross between Northern Spy and Duchess. Maybe it is.
Ripens around Oct. 7 and keeps for a month. Four ancient trees are still fruiting on Tory Hill in Phillips, ME, not far from Temple where the Deane family hid escaped slaves en route to Canada. Now on trial in many Maine locations.
