Cucurbita moschata
(110 days) Open pollinated.

Tiny squash with a big personality. Flavor and sweetness is concentrated in these personal-sized butternuts, making them a clear winner in our taste trials. A feast for the eyes as well with their honey-tan skin and brilliant orange flesh. Smaller than Little Dipper and Burpee’s Butterbush with fruits averaging 6" long and 1 lb each—perfect for a single serving or side dish for two.

Prolific, with at least 8 fruits per plant on long vines. Decent resistance to powdery mildew. Fruits store reliably until December and sometimes beyond, but enjoy them sooner than bigger butternuts.

Honeynut was developed by Michael Mazourek at Cornell. Although the breeding project for this squash started in the 1980s, the variety has only just risen to popularity and commercial availability in the last decade. Convincing people that Honeynut was more than just a puny version of larger beloved varieties took some effort and was helped along by a fortuitous collaboration with Chef Dan Barber.
