Medium-sized light yellow fruit has a tender skin you can almost see through. Tart fresh eating and cooks up into a flavorful slightly tart light yellow sauce in 6-7 minutes. Skip the sugar. Skins will dissolve in your mouth as you eat.
Transparents ripen fairly early in August and beware: they come mostly all at once and go by quickly. Get the sauce pot ready and don’t blink or you might miss them. It’s okay to eat or cook them a little on the green side. When the first of them fall to the ground, pick the rest within a week or so.
