Long Chinese eggplant will please cooks who enjoy the ease of working with uniform slices. Plants are vigorous, stress tolerant, and start producing early for a decent overall yield. If Pingtung is harvested before full maturity, its light purple color is especially appealing. As it approaches its full 11", its skin darkens but retains a pleasing sheen. Has an appealing sweetness that will keep you coming back for more. Outperformed other comparable varieties in this year’s trial.
