French Fingerling dark rose-red skin, yellow flesh This fine little fingerling, a spud of lore and song, is more than just a fancy fad. Pick these sweet little potatoes on the early side to avoid growth cracks and fully revel in their tenderness, before they embark on their more awkward and bulky potato adolescence. The skin, though it scuffs easily in the packing shed, is worth the extra care as it stays smooth to the touch, tender and awful pretty. Of course, the French Fingerling is an old favorite for roasting into buttery delicate morsels, but it’s got more to offer: inside, the yellow flesh has delicate pink markings that would make some stunning potato chips if you gave them the chance. Very heavy yielding tall spreading plants show resistance to leaf hopper and the tubers set widely. Supply limited; order early!
